What You Need to Know
During heating to ~70 °C chestnut starch gelatinizes, reducing viscosity and allowing butter droplets to disperse. The emulsification at ~60 °C, aided by whisking, creates a viscoelastic network stabilized by a small amount of xanthan gum. The resulting emulsion resists phase separation until cooled, provided temperature and moisture conditions are maintained.
