What You Need to Know
During lamination, butter crystals are preserved at 0–4 °C and softened to 30–35 °C before rolling, allowing the dough to rise while maintaining flaky layers. Baking at 200 °C gelatinizes starches to set the crumb, while Maillard reactions brown the crust and phase separation of butter fat creates the characteristic flakiness.
