What You Need to Know
The high salt concentration draws out water, lowering the water activity below 0.85 and creating an acidic environment (pH ~5–5.5). Phenolic compounds from cured cedar or spruce, such as eugenol and syringol, inhibit spoilage bacteria and fungi. Together, these chemical changes stabilize the protein matrix and develop a characteristic flavor.
