in a large bowl combine the yogurt, honey, and vanilla; mix well and put it in the refrigerator until ready to use. mix together the oats, cocoa, and sugar, and pour into a skillet. toast the oats over medium heat for about 8 minutes, stirring occasionally. remove from heat and place the oat mixture into a bowl to cool completely and set aside. put the pitted cherries into the skillet over medium heat and cook for about 10 minutes or until soft. then remove from heat and allow to cool completely. assemble the parfaits by pouring a half cup of yogurt into each of 2 glasses. spoon some of the oats over the top, then top with some of the cherries, then pour the rest of the yogurt on top, and finish off with more oats and cherries. put the parfaits in the fridge for a couple of hours before serving. in fact, i urge you to freeze it because it is that much better when frozen.
