Soak noodles according to package directions, or for at least 30 minutes in cold water. Drain noodles and water. 2. Cook noodles according to package instructions, or fill pot halfway and boil water. Put noodles in boiling water and cook for 5 minutes. Drain and set aside. 3. While noodles are cooking, dice chicken and season with a few dashes of salt, pepper, and seasoning salt. 4. Spray pan with cooking spray and saute chicken on medium-high heat until cooked thoroughly, around 5-7 minutes. Cover to keep warm. 5. Heat both oils and red crushed pepper over medium heat in small sauce pan for 2 minutes. 6. Strain out pepper and reserve oil in a bowl. 7. Whisk in honey and soy sauce to oil. 8. In a large pot, combine noodles, chicken, and sauce until thoroughly and evenly coated. 9. Top each plate with green onions, cilantro, peanuts, carrots, and lime juice. Enjoy! Notes: 2 tablespoons of red crushed pepper is pretty spicy. We like spicy food so this was perfect for us. I would say its about a 6-7 out of 10 on the spicy scale. If you are not a fan of spicy food, then definitely use only 1 tablespoon or less of red crushed pepper.
