Abstract
Fermentation technology is an age-old widely applied biotechnological process used for the preservation of foods and beverages. Fermented foods are consider as the storehouse of microorganisms as microbes play a key role during the fermentation process, which leads to required biochemical changes and important changes in the food. Many people from different communities of the world practice the fermentation process in their unique traditional methods or with advanced methods. People living in the North-Eastern region of India strictly follow their traditional methods of preserving foods and beverages which are inherited from generation to generation.
