Ceres, the Goddess of Grain and Agriculture

Abstract

The word cereal is named after the Roman god Ceres, the goddess of agriculture, grain crops and fertility. This chapter explores how our propensity for wheat products and the “art” of grain milling developed from Roman times to the current gradual reduction system and its consequences.
