Role of Nanotechnology for Better Food Preservation

Abstract
The food industry is undergoing a metamorphic transformation with nanotechnology, a technology that offers creative solutions for prolonging the quality and safety of food products. The major application of nanotechnology in food preservation including nanocoatings, nanoencapsulation, antimicrobial nanomaterials, and nanosensors for real-time food quality monitoring is discussed in this chapter. Indeed, edible nanobased films and coatings can help prolong the shelf life of fruits and vegetables by reducing respiration and moisture loss and therefore slowing down the ripening process. Encapsulation methods such as liposomes, nanocochleates, and colloidosomes can protect bioactive compounds susceptible to environmental stresses (e.g., vitamins, antioxidants) while improving their bioavailabi
