Abstract
This publication examines the chemistry underlying food safety and preservation through an analytical lens, highlighting how chemical processes influence food stability, microbial control, nutrient protection, and contaminant behaviour. It reviews key analytical techniques—including chromatographic, spectroscopic, and physicochemical methods—used to detect hazards such as pesticides, heavy metals, mycotoxins, and adulterants. The work further evaluates traditional and emerging preservation methods, explaining their chemical mechanisms and sustainability implications for modern food systems.
