Abstract
This dissertation investigates the application of Tenebrio molitor (yellow mealworm) larvae reared on various agro-industrial by-products for the development of safe, more sustainable, and value-added innovative products. Three experimental and one control group of larvae were formed using substrates composed of brewery by-products, grain processing residues, and solanized and sprouting-affected potatoes. The chemical composition and nutritional value of the larvae were evaluated, along with the accumulation of potential contaminants, including heavy metals, biogenic amines, pesticides, nitrates, nitrites, glycoalkaloids, peroxides, and volatile fatty acids.
