EFFECT OF WATER-HEAT TREATMENT REGIMES ONDEHULLING AND POLISHING OF SPELT WHEAT

Abstract

The article examines the use of spelt and einkorn as hulled forms of wheat, their current distribution worldwide and in Ukraine, processing directions, and their place in the grain production structure. It is shown that einkorn and spelt remain niche crops but maintain stable demand in the food industry. The chemical composition of the grain is analyzed, demonstrating that a high protein content, significant proportion of insoluble dietary fiber, and starch structure determine the increased value of processed products, while simultaneously complicating the establishment of processing regimes.
