A multifunctional fluorescent probe for dual-channel detection of bisulfite and biogenic amines: Applications in food freshness monitoring, bioimaging, and functional dyes.

Abstract

In this study, a syringaldehyde-based fluorescent probe HTYF was successfully synthesized, and HTYF exhibited colorimetric and fluorescent responses to HSO3- and various biogenic amines (BAs). Notably, HTYF can be used to detect SO2 derivatives in actual food samples, perform imaging of HSO3- in living cells and zebrafish. More importantly, HTYF-loaded agarose, filter paper, or PVA membranes can monitor the freshness of meat in real time through dual channels. Furthermore, a custom-developed mobile application in combination with HTYF can establish a linear relationship between the TVB-N values and RGB values, and accurately determine the TVB-N value of meat/seafood samples. Compared with the Chinese national standard method, the reliability and accuracy of the freshness evaluation were improved. Furthermore, we explored the recognition mechanism of HSO3- and BAs by HTYF, and the potential applications of HTYF in fluorescent dye (flexible films, glass coatings, impregnated dyes, printing, and fingerprint inks). Therefore, HTYF has great application prospects in the field of food safety, bioimaging, and fluorescent dyes.
