Description
Banga sauce drying is a traditional sun‑drying method used in the Niger Delta region of Nigeria to preserve palm‑nut‑based sauces by concentrating fats, sugars, and proteins while reducing moisture.
Technical
During sun‑drying, the high temperature (30–35 °C) drives water loss, concentrating the fat (30–35 %) and sugars (4–6 %) and promoting lipid oxidation. Spontaneous lactic acid fermentation lowers the pH to 4.5–5.0, inhibiting spoilage microorganisms and contributing to the characteristic sour flavor.
