The peanut coating, rich in oleic and linoleic acids, remains liquid at grilling temperatures and forms a protective film that reduces moisture loss and imparts a nutty aroma. Excessive heat can accelerate char formation, producing acrylamide and polycyclic aromatic hydrocarbons.
