Technical
The lactic acid bacteria (Lactococcus lactis, Lactobacillus delbrueckii subsp. lactis, Streptococcus thermophilus) convert lactose into lactic acid, lowering pH to 4.6–4.8 and inducing casein micelle aggregation. Proteolytic enzymes from the same flora further hydrolyze casein over months, generating peptides and free amino acids that contribute to flavor development.
