Technical
The process involves heating dried corn kernels in a dilute alkaline solution (typically 1–3 % sodium hydroxide or calcium hydroxide) at 90–100 °C. Alkaline hydrolysis breaks down hemicellulose and protein–carbohydrate complexes, releases ferulic acid, and forms calcium–citrate complexes that bind starch granules, producing a cohesive masa.
