Technical
The process begins with grinding mustard seeds (Brassica spp.) into a coarse paste, then adding a 1:1 liquid (wine or vinegar) to activate the myrosinase enzyme. This hydrolyzes glucosinolates to isothiocyanates, the compounds responsible for mustard’s characteristic pungency. Subsequent lactic acid fermentation lowers the pH, stabilizes flavor, and inhibits spoilage, while aging at moderate temperatures allows volatile esters to mellow.
