During roasting, the sugars in honey undergo caramelization, breaking down into aldehydes, acids, and hydroxymethylfurfural (HMF). Simultaneously, the terpenes in pine needles—primarily alpha‑pinene and beta‑pinene—evaporate at temperatures around 200 °C, but even at 70–80 °C some aromatic compounds are released, enriching the surface of the protein with resinous notes. The combined thermal processes create a complex flavor profile that balances sweetness, smokiness, and resinous undertones.
