During baking, the Maillard reaction between egg proteins and reducing sugars forms brown melanoidins that give the crust its golden color, while the butter fat melts and renders, creating a tender crumb. The honey syrup, heated to 80 °C, dissolves sugars to a ~50 % w/w concentration; the added lemon juice lowers the pH to inhibit crystallization, and the vinegar provides a preservative effect. Together these processes produce a sweet, spiced cookie with a glossy, honeyed coating.
