Modified atmosphere packaging (MAP) replaces ambient air with a tailored gas mixture, typically high in CO₂ and low in O₂, to inhibit microbial growth and oxidative reactions while preserving sensory attributes.
Technical
In MAP, CO₂ acts as a bacteriostatic agent by lowering pH and disrupting cell membranes of aerobic spoilage organisms, while reduced O₂ limits aerobic respiration and lipid oxidation. The gas mixture also slows enzymatic activity by creating a low-oxygen environment, thereby extending shelf life. The effectiveness is temperature-dependent, with refrigeration (0–4 °C) maximizing the inhibitory effects.
