preheat oven to 400 degrees. line a jelly roll pan with aluminum foil for easy cleanup. slice potatoes into 1/4 inch thick slices. combine bacon, potatoes, garlic, salt and pepper and spread evenly on a prepared jelly roll pan. cover with foil and bake 20 minutes. remove potatoes from the oven and stir. return to the oven and bake uncoverd for an additional 20 minutes. if desired, place under the broiler to brown the potatoes and bacon a bit more. drain on several layers of paper towels. adjust salt and pepper to taste and top with chopped scallions, and if desired, cheddar cheese and sour cream.
