Heat the oil in a large frying pan and fry the onion for 6-7 mins until soft and golden. Pour in the stock, wine and 3/4 cup water and bring to a boil. Reduce the heat and cover and simmer for 10 mins. Add the tomato slices to the hot soup and simmer for a further 1-2 mins until just softened. Season to taste with salt and freshly ground black pepper. Serve in warmed bowls sprinkled with the parsley.
