This is a two-bowl recipe and very easy to make. It probably would make a great "lunchbox" dessert too. Preheat the oven to 375 degrees and grease a 9x13 inch glass pan. Add the sliced strawberries, sugar and cornstarch to a bowl. Lightly toss to mix everything together. Set aside. In another large bowl, mix together the flour, sugar, baking powder, and salt. Mix everything together. Cut the butter into small pieces. Cut the butter into the dry ingredients with a pastry cutter. Beat the egg and the vanilla together. Add the milk to the egg and vanilla and pour into the bowl with the dry ingredients and the butter. Mix everything together (you can use your clean hands if necessary) until you have a crumbly dough. Take about 2/3 of the dough and pour it into the bottom of the greased pan. Press it down with your hands until it has formed a thick crust on the bottom. Pour the sliced strawberries evenly over the crust. Scatter the remaining dough crumbles over the top of the strawberries. Bake the bars at 375F for 50 minutes. Remove from the oven and let the bars cool before cutting them into squares. (Serve them as a snack or with ice cream for dessert!)
